酱料 Paste

这个酱料做好后非常好用,可以配饭,可以配面,也可以拌豆腐。做好后,放进冰箱,慢曼的享用。有时临时没有菜肴,用这酱料再加一粒煎蛋,可以又是一餐。菜脯,腊肠,红小葱,虾米,蒜头,辣椒,
焙根,干贝(随意)
salted raddish, chinese sausage, small onion,
dried prawns, garlic, chilli, bacon, dried scallop
(optional)
将全部的材料剁碎。干贝泡水浸软,蒸20分钟,撕碎
chopped all the ingredients.dried scallop soak
into water till soft,steam 20 minutes.

热油,爆香红葱
heat oil,fragrant chopped onion.
加入蒜头,爆香
then add in garlic,fragrant.

加入焙根 ,爆香。
add in bacon, fragrant it.

加入腊肠,爆香。
add in chinese sausage,



最后加入虾米和辣椒,菜脯,干贝,爆香全部的材料
then add in dried prawns and chilli, salted raddish,
dried scallop, fragrant all the ingredients.

我没有放很多的油,如果你的健康许可, 你
可以加多一点的油。
I didn't put a lot of oil. if your health allow,
you can put more oil.

发糕 Chinese Steamed Cup Cake

记得每逢过年时,妈妈都会从菜市里买一些发糕回来。在我的印象中,发糕应该比蛋糕便宜,可蛋糕 又比发糕好吃。所以也并不是有很多人喜欢吃发糕。不过,有时怀念一下儿时吃过的东西,也是一种辛福。


粘米粉 150 克, 高筋面粉 50 克, 双倍发粉 1 大
匙, 幼糖 80 克, 7喜汽水 200 毫升.
rice flour 150 g, high protein flour 50 g,
double action baking powder 1 tbsp,
caster sugar 80 g, 7 up soft drink 200 ml.

粘米粉, 高筋面粉,发粉,幼糖拌匀。
combine rice flour,high protein flour, baking
powder, sugar.
然后慢慢的倒入汽水
then slowly add in 7up soft drink


搅至滑面
mix well till it smooth

加入一小滴食用红素
add a small drop of red food colouring

把混合面糊小心的倒入已铺上纸杯的小杯里,
八分满就好,静置15分钟。放入预热蒸炉大火蒸25分钟。
pour the mixture into small cup with lined
paper cup, about 80% full, rest for 15 mints.then steam
in a preheated steamer over high heat for 25
minutes.

咖央 Kaya

提起咖央(kaya),在我国,无论是小孩或大人都喜欢。做妈妈的都会牛油咖央涂面包给小孩作早餐。大人就在kopitiam 会叫一份牛油咖央涂面包再来一杯怡保白咖啡,这真是绝配!在我国,想吃咖央,到处都有的卖。在菜市里,在夜市,有些阿婶在摊子上摆了几罐咖央来卖(都是自己煮的),有椰香味的,有班兰味(pandan)的,又香又滑。来到比利时,得自己动手煮了。这是一个考耐力的方子,没有特别的密诀,只有耐力。如果你有耐力,又香又滑的咖央一定会成功。

鸡蛋 5粒 幼 糖150克 椰浆200 毫升
5 eggs 150g caster sugar 200ml coconut milk


用一半的糖,鸡蛋,椰浆
take half the sugar,egg and coconut milk

用搅拌机低速打3分钟
use mixer at low speed for 3 minutes

过沥
strain


另一半的糖倒进锅里,慢火煮至糖溶
put the other half of the sugar into a pot
use slow heat cook the sugar till melt

糖完全溶化时,小心的加入1/2 杯水,煮4分钟后,
离火3分钟。
when sugar totally melted, carefully add in 1/2 cup of
water,cook for 4 minutes then keep away
from the fire for 3 minutes


然后加入蛋浆,边加边快手搅拌。
then add in the egg mixture,stir the sugar
mixture quickly.
慢火煮至浓,大约1 个小时。煮时要 不停搅拌。
煮时 放一片班兰叶(拍照片时还没有放班兰叶)
cook at slow fire till thicken,approximate about 1 hour.
need to keep on stirring when cook.put a piece of
pandan leaf when cook.
煮至这样的浓度。
cook till this thickness

冷却后,就会变成这样的浓度。(如果没有这样的浓度,
可以再次煮多15分钟。)
after cooling, will become this thickness.
(if don't have this thickness, you can cook again for
15 minutes.)

成品
this is it.

涂上面包,再加一杯咖啡。
spread on bread and go with a cup of coffee

配糯米饭。
糯米饭:糯米(250 克)泡水过夜,沥干水,
加1/4 杯水,1/4 小匙盐,蒸20分钟,加入4汤匙椰汁,
搅均匀,再蒸15分钟。
or with glutinous rice
glutinous rice:glutinous rice (250 g), soak over night,drain
well, add in 1/4 cup water, 1/4 tsp salt, mix well, steam for
20 minute, then add in 4 tbsp coconut milk, mix well,
then steam for 15 minutes more.
