咖央 Kaya

提起咖央(kaya),在我国,无论是小孩或大人都喜欢。做妈妈的都会牛油咖央涂面包给小孩作早餐。大人就在kopitiam 会叫一份牛油咖央涂面包再来一杯怡保白咖啡,这真是绝配!在我国,想吃咖央,到处都有的卖。在菜市里,在夜市,有些阿婶在摊子上摆了几罐咖央来卖(都是自己煮的),有椰香味的,有班兰味(pandan)的,又香又滑。来到比利时,得自己动手煮了。这是一个考耐力的方子,没有特别的密诀,只有耐力。如果你有耐力,又香又滑的咖央一定会成功。

鸡蛋 5粒 幼 糖150克 椰浆200 毫升
5 eggs 150g caster sugar 200ml coconut milk


用一半的糖,鸡蛋,椰浆
take half the sugar,egg and coconut milk

用搅拌机低速打3分钟
use mixer at low speed for 3 minutes

过沥
strain


另一半的糖倒进锅里,慢火煮至糖溶
put the other half of the sugar into a pot
use slow heat cook the sugar till melt

糖完全溶化时,小心的加入1/2 杯水,煮4分钟后,
离火3分钟。
when sugar totally melted, carefully add in 1/2 cup of
water,cook for 4 minutes then keep away
from the fire for 3 minutes


然后加入蛋浆,边加边快手搅拌。
then add in the egg mixture,stir the sugar
mixture quickly.
慢火煮至浓,大约1 个小时。煮时要 不停搅拌。
煮时 放一片班兰叶(拍照片时还没有放班兰叶)
cook at slow fire till thicken,approximate about 1 hour.
need to keep on stirring when cook.put a piece of
pandan leaf when cook.
煮至这样的浓度。
cook till this thickness

冷却后,就会变成这样的浓度。(如果没有这样的浓度,
可以再次煮多15分钟。)
after cooling, will become this thickness.
(if don't have this thickness, you can cook again for
15 minutes.)

成品
this is it.

涂上面包,再加一杯咖啡。
spread on bread and go with a cup of coffee

配糯米饭。
糯米饭:糯米(250 克)泡水过夜,沥干水,
加1/4 杯水,1/4 小匙盐,蒸20分钟,加入4汤匙椰汁,
搅均匀,再蒸15分钟。
or with glutinous rice
glutinous rice:glutinous rice (250 g), soak over night,drain
well, add in 1/4 cup water, 1/4 tsp salt, mix well, steam for
20 minute, then add in 4 tbsp coconut milk, mix well,
then steam for 15 minutes more.
